Description

This Healthy Spinach Artichoke Chicken Bake is a flavorful, nutritious dish featuring tender chicken breasts topped with a creamy blend of spinach, artichoke hearts, and cheeses. It’s an easy-to-make baked recipe perfect for a wholesome weeknight dinner packed with protein and vegetables.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Spinach Artichoke Mixture

  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cloves garlic, minced
  • 1/2 cup Greek yogurt (plain, non-fat)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the chicken.
  2. Sauté Garlic: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Cook Spinach: Add chopped spinach to the skillet and cook until wilted, roughly 2-3 minutes, then remove from heat.
  4. Combine Mixture: Stir in the chopped artichoke hearts, Greek yogurt, shredded mozzarella, grated Parmesan, Italian seasoning, salt, and pepper into the spinach mixture until well combined.
  5. Prepare Chicken: Place the chicken breasts in a lightly greased baking dish. Spread the spinach-artichoke mixture evenly over each piece of chicken.
  6. Bake Chicken: Bake uncovered for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C), and juices run clear.
  7. Broil for Browning: For a golden, bubbly top, broil the dish for an additional 2-3 minutes while watching closely to prevent burning.
  8. Rest and Serve: Remove the chicken from the oven and let it rest for 5 minutes before serving to allow juices to redistribute.

Notes

  • Ensure chicken breasts are of even thickness for uniform cooking.
  • You can substitute fresh spinach with frozen spinach, thoroughly drained.
  • Use full-fat Greek yogurt for a richer texture if desired.
  • Watch carefully during broiling to avoid burning the cheese topping.
  • Check internal temperature with a meat thermometer for safety and best results.
