Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the filling: In a bowl, combine hearts of palm, cream cheese, Dijon mustard, Parmesan, parsley, garlic powder, salt, and pepper.
- Assemble the hand pies: Roll out the puff pastry, cut into rectangles, spoon filling onto half of each piece, fold over, seal with a fork, brush with egg wash, and vent the tops.
- Bake: Bake for 18–22 minutes until golden brown and puffed.
- Serve: Let cool slightly before serving.

- For a vegan version, use dairy-free cream cheese and omit the egg wash.
