Instructions
- Season and Sear Chicken: Season the chicken thighs and drumsticks with salt and pepper on both sides. Heat olive oil in a large Dutch oven or deep skillet over medium-high heat. Sear the chicken on both sides until browned, about 4–5 minutes per side. Remove and set aside.
- Sauté Vegetables and Garlic: In the same pan, add sliced onion and bell peppers. Sauté for 4–5 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
- Deglaze with Wine: Pour in the red wine (if using) and scrape the bottom of the pan to deglaze. Let it simmer for 2 minutes to reduce slightly.
- Add Tomatoes and Herbs: Add crushed tomatoes, chicken broth, oregano, thyme, and red pepper flakes. Stir well to combine the flavors.
- Simmer Chicken: Return the chicken to the pan, nestling it into the sauce. Reduce heat to low, cover, and simmer for 35–40 minutes, or until the chicken is tender and cooked through.
- Thicken Sauce and Garnish: Uncover and simmer for an additional 5–10 minutes to thicken the sauce if needed. Garnish with chopped fresh parsley or basil before serving.
