Instructions

  1. Season and Sear Chicken: Season the chicken thighs and drumsticks with salt and pepper on both sides. Heat olive oil in a large Dutch oven or deep skillet over medium-high heat. Sear the chicken on both sides until browned, about 4–5 minutes per side. Remove and set aside.
  2. Sauté Vegetables and Garlic: In the same pan, add sliced onion and bell peppers. Sauté for 4–5 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.
  3. Deglaze with Wine: Pour in the red wine (if using) and scrape the bottom of the pan to deglaze. Let it simmer for 2 minutes to reduce slightly.
  4. Add Tomatoes and Herbs: Add crushed tomatoes, chicken broth, oregano, thyme, and red pepper flakes. Stir well to combine the flavors.
  5. Simmer Chicken: Return the chicken to the pan, nestling it into the sauce. Reduce heat to low, cover, and simmer for 35–40 minutes, or until the chicken is tender and cooked through.
  6. Thicken Sauce and Garnish: Uncover and simmer for an additional 5–10 minutes to thicken the sauce if needed. Garnish with chopped fresh parsley or basil before serving.
