Description

Ingredients

Ground Beef:

1 pound

Olive Oil:

1 tablespoon

Onion:

1 medium (diced)

Garlic:

2 cloves (minced)

Carrots:

3 (peeled and sliced)

Celery Stalks:

2 (sliced)

Potatoes:

3 (peeled and diced)

Diced Tomatoes:

1 (14.5-ounce can)

Beef Broth:

6 cups

Tomato Paste:

1 tablespoon

Dried Basil:

1 teaspoon

Dried Oregano:

1 teaspoon

Smoked Paprika:

1/2 teaspoon

Salt and Black Pepper:

to taste

Corn:

1 cup (frozen)

Green Beans:

1 cup (frozen)

Fresh Parsley:

2 tablespoons (optional, for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-6 minutes.
  2. Drain excess fat if necessary. Add the onion and garlic, and sauté for 2-3 minutes until softened.
  3. Stir in the carrots, celery, and potatoes. Add the diced tomatoes, beef broth, tomato paste, basil, oregano, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes until vegetables are tender.
  5. Stir in the corn and green beans, and cook for another 5 minutes until heated through. Garnish with fresh parsley before serving if desired.

  • For extra flavor, use fire-roasted diced tomatoes.
