- Prepare the Glaze: In a medium saucepan, mash 1 cup of the strawberries with a fork or potato masher. Add the sugar, cornstarch, water, lemon juice, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear, about 5–7 minutes.
- Add Gelatin (Optional): If using, stir in the strawberry gelatin until dissolved. Remove from heat and let cool slightly.
- Assemble the Pie: Arrange the remaining whole or halved strawberries in the pre-baked pie crust. Pour the glaze evenly over the strawberries, using a spatula to gently spread it if needed.
- Chill and Serve: Refrigerate for at least 4 hours or until set. Serve chilled with whipped cream, if desired.
