Potato Chips:
- 3 large russet potatoes (thinly sliced)
- vegetable oil for frying
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped chives (optional)
Gorgonzola Cheese Sauce:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 3/4 cup whole milk
- 1/2 cup crumbled Gorgonzola cheese
- 1/4 teaspoon garlic powder
- salt and pepper to taste
Instructions
- Prepare the Potato Chips: Wash and thinly slice the potatoes. Rinse and pat dry. Heat oil to 350°F and fry the slices until golden and crisp.
- Make the Gorgonzola Sauce: Melt butter, whisk in flour, then slowly add milk. Stir in Gorgonzola and garlic powder until smooth. Season with salt and pepper.
- Serve: Drizzle the warm chips with Gorgonzola sauce and garnish with chives.
Notes
- You can make the chips ahead and re-crisp them in a 350°F oven for a few minutes before serving.
- The Gorgonzola sauce also works well with fries, roasted vegetables, or steak.
