Instant pot Chicken Tacos

A quick and easy family meal that is ready in minutes and made in one pot is chicken tacos.

This recipe involves little to no prep work and can be on the table in no time. A variety of toppings means that everyone can have exactly what they want, the way they want it.

The sweet, yet spicy sauce gives these tacos a healthy kick and the Instant pot infuses flavor right into the chicken, leaving you with a delicious meal that people will think you spent hours to create it.

  • boneless skinless chicken breasts
  • 1 can fire-roasted diced tomatoes
  • 1 cup Chicken Broth
  • I cup Hot Sauce
  • 1-2 Sweet Red Peppers and Green Peppers diced.
  • 1 tsp salt
  • 1 tsp Garlic Powder
  • tsp Chili Powder or Flakes
  • ½ tsp Black Pepper

*Note: If you do not own an Instant pot this recipe can be created in a skillet by cooking all ingredients on medium heat until cooked through.


Add chicken, tomatoes, broth, hot sauce, and seasonings to your Instant pot.

Secure lid and cook on high pressure for 12 minutes.

Quick-release the pressure valve according to the manufacturer’s instructions.

Use two forks to shred the chicken.

Using a slotted spoon, serve chicken mixture on tortillas and add desired toppings.

Possible toppings include diced avocado, sliced jalapeño, diced onions, freshly chopped cilantro, diced peppers, salsa, and sour cream.
