Main Meatloaf:

  • 1 ½ pounds ground beef (85% lean)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup milk
  • 2 large eggs
  • ¼ cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley

Topping:

  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard

Instructions

  1. Prepare Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, milk, eggs, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix just until combined—do not overmix.
  2. Shape and Top Meatloaf: Shape the mixture into a loaf that fits inside your Instant Pot. In a small bowl, mix the topping ingredients and spread over the meatloaf.
  3. Cook in Instant Pot: Pour water into the Instant Pot, place trivet inside, set meatloaf on trivet, seal lid, cook on High Pressure for 25 minutes. Allow natural release, then broil if desired.
  4. Rest and Serve: Let the meatloaf rest before slicing and serving.

Notes

  • You can swap ground beef for ground turkey or a meatloaf blend.
