Instructions

  1. Prepare the Chicken Cutlets: Place chicken breasts between two sheets of plastic wrap and pound to an even ½-inch thickness. Season with salt and pepper.
  2. Dredge the Chicken: Prepare three shallow bowls with flour, beaten eggs, and a mixture of breadcrumbs and Parmesan. Coat each chicken breast in flour, then egg, and finally breadcrumb mixture, pressing to adhere.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken cutlets for 4–5 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
  4. Prepare the Topping: Toss cherry tomatoes with balsamic glaze and chopped basil in a bowl.
