For the Soup:
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- 2 tbsp tomato paste
- 1 (28 oz) can crushed tomatoes
- 6 cups chicken or beef broth
- 8 lasagna noodles, broken into pieces
- Salt and black pepper to taste
For the Cheese Topping:
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
For Garnish:
- Fresh basil or parsley (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon, about 5–6 minutes. Drain excess grease if needed.
- Add diced onion and cook for 4–5 minutes until softened. Stir in garlic, basil, oregano, red pepper flakes, and tomato paste; cook for 1 minute until fragrant.
- Pour in crushed tomatoes and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add broken lasagna noodles and cook uncovered, stirring occasionally, for 10–12 minutes or until pasta is al dente. Season with salt and pepper to taste.
- In a small bowl, mix ricotta, mozzarella, and Parmesan.
- To serve, ladle soup into bowls and top each with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley if desired.

- For a lighter version, use ground turkey or chicken sausage.
