  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or hot)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 6 cups chicken or beef broth
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper to taste

For the Cheese Topping:

  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For Garnish:

  • Fresh basil or parsley (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon, about 5–6 minutes. Drain excess grease if needed.
  2. Add diced onion and cook for 4–5 minutes until softened. Stir in garlic, basil, oregano, red pepper flakes, and tomato paste; cook for 1 minute until fragrant.
  3. Pour in crushed tomatoes and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add broken lasagna noodles and cook uncovered, stirring occasionally, for 10–12 minutes or until pasta is al dente. Season with salt and pepper to taste.
  5. In a small bowl, mix ricotta, mozzarella, and Parmesan.
  6. To serve, ladle soup into bowls and top each with a generous spoonful of the cheese mixture. Garnish with fresh basil or parsley if desired.

  • For a lighter version, use ground turkey or chicken sausage.
