Instructions

  1. Heat the oil: Heat olive oil in a large skillet over medium-high heat until shimmering.

  4. Create lemon sauce: Stir in the chicken broth and fresh lemon juice. Bring the mixture to a simmer, scraping any browned bits from the bottom of the pan to incorporate flavor.
  5. Simmer chicken in sauce: Return the chicken breasts to the skillet and let them cook in the sauce for 2-3 minutes. This allows the sauce to thicken slightly and coat the chicken with bright lemon flavor.
