Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
Sauce
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat the oil: Heat olive oil in a large skillet over medium-high heat until shimmering.
- Season and sear chicken: Season the chicken breasts generously with salt and pepper. Place them in the hot skillet and sear for 6-7 minutes on each side until they develop a golden-brown crust and are cooked through. Remove the chicken from the skillet and set aside on a plate.
- Sauté garlic: In the same skillet, melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant but not browned.
- Create lemon sauce: Stir in the chicken broth and fresh lemon juice. Bring the mixture to a simmer, scraping any browned bits from the bottom of the pan to incorporate flavor.
- Simmer chicken in sauce: Return the chicken breasts to the skillet and let them cook in the sauce for 2-3 minutes. This allows the sauce to thicken slightly and coat the chicken with bright lemon flavor.
- Garnish and serve: Sprinkle the chopped fresh parsley over the chicken for a fresh, herbal finish and serve immediately while hot.
Notes
- For extra zest, add lemon zest to the sauce along with the juice.
- You can use bone-in chicken breasts but increase cooking time accordingly.
- Serve with steamed vegetables or over rice to soak up the lemon sauce.
- Make sure not to overcook the chicken to keep it juicy and tender.
