Ingredients

Pasta:

  • 12 ounces rotini or bowtie pasta

Vegetables:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup kalamata olives, sliced
  • ½ cup red onion, thinly sliced

Additional Ingredients:

  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh basil
  • juice and zest of 1 lemon
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • salt and black pepper to taste

Instructions

  1. Cook the Pasta: Boil the pasta until al dente, then rinse under cold water to cool.
  2. Prepare the Dressing: Whisk together lemon juice, zest, olive oil, vinegar, garlic, oregano, salt, and pepper.
  3. Combine Ingredients: In a large bowl, mix pasta, tomatoes, cucumber, olives, onion, feta, parsley, and basil.
  4. Add Dressing: Pour dressing over the salad and toss to coat everything.
  5. Chill and Serve: Refrigerate for 30 minutes before serving.
