Pasta:
- 12 ounces rotini or bowtie pasta
Vegetables:
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup kalamata olives, sliced
- ½ cup red onion, thinly sliced
Additional Ingredients:
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh basil
- juice and zest of 1 lemon
- ¼ cup olive oil
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- salt and black pepper to taste
Instructions
- Cook the Pasta: Boil the pasta until al dente, then rinse under cold water to cool.
- Prepare the Dressing: Whisk together lemon juice, zest, olive oil, vinegar, garlic, oregano, salt, and pepper.
