  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup orzo pasta
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice and zest of 1 lemon
  • 2 cups fresh spinach, chopped

Optional Garnish:

  • fresh parsley

Instructions

  1. Saute Aromatics: In a large pot over medium heat, heat olive oil. Add onion, carrots, and celery, and cook for 5–6 minutes until softened.
  2. Add Flavors: Stir in garlic and cook for 1 minute more. Add vegetable broth, orzo, chickpeas, oregano, salt, and pepper.
  3. Cook Orzo: Bring to a boil, then reduce heat to a simmer and cook for 8–10 minutes, stirring occasionally, until orzo is tender.
  4. Finish Soup: Stir in lemon juice, lemon zest, and spinach. Cook for 1–2 minutes until spinach is wilted. Taste and adjust seasoning as needed.
  5. Serve: Garnish with fresh parsley and serve warm.

Notes

  • For extra creaminess, stir in 1/4 cup coconut milk or half-and-half before serving.
