For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup orzo pasta
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- juice and zest of 1 lemon
- 2 cups fresh spinach, chopped

Instructions
- Saute Aromatics: In a large pot over medium heat, heat olive oil. Add onion, carrots, and celery, and cook for 5–6 minutes until softened.
- Add Flavors: Stir in garlic and cook for 1 minute more. Add vegetable broth, orzo, chickpeas, oregano, salt, and pepper.
- Cook Orzo: Bring to a boil, then reduce heat to a simmer and cook for 8–10 minutes, stirring occasionally, until orzo is tender.
- Finish Soup: Stir in lemon juice, lemon zest, and spinach. Cook for 1–2 minutes until spinach is wilted. Taste and adjust seasoning as needed.
- Serve: Garnish with fresh parsley and serve warm.
Notes
- For extra creaminess, stir in 1/4 cup coconut milk or half-and-half before serving.
- This soup can be made gluten-free by using gluten-free orzo or small pasta.
