  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt.
  3. Mix wet ingredients: In a large bowl, beat the softened butter, sugar, and lemon zest until light and fluffy. Add the egg, vanilla extract, and lemon juice, and mix until fully combined.
  4. Combine dry and wet ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Form dough balls: Scoop tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in the extra granulated sugar.
  6. Bake: Place the dough balls on the prepared baking sheets and bake for 10–12 minutes, or until the edges are just turning golden.
