Description

A classic, moist and flavorful pumpkin bread made with Libby’s 100% Pure Pumpkin, featuring warm spices like cinnamon, nutmeg, cloves, and ginger. Perfect for autumn baking, this easy-to-make pumpkin bread yields tender slices with a rich taste and soft crumb.

Ingredients

Scale

Dry Ingredients

  • 3 ½ cups all-purpose flour
  • 3 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger

Wet Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 1 (15-ounce) can Libby’s 100% Pure Pumpkin
  • 2/3 cup water

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans to prepare them for baking.
  2. Combine Dry Ingredients: In a large bowl, whisk together all-purpose flour, granulated sugar, baking soda, salt, ground cinnamon, ground nutmeg, ground cloves, and ground ginger until fully blended.
  3. Mix Wet Ingredients: In a separate bowl, whisk together vegetable oil, large eggs, Libby’s 100% Pure Pumpkin, and water until the mixture is smooth and uniform.
  4. Combine Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to ensure a tender crumb.
  5. Bake: Divide the batter evenly between the prepared loaf pans. Place in the oven and bake for 60 to 70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Cool: Allow the loaves to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely before slicing and serving.

Notes

  • Ensure not to overmix the batter to keep the bread moist and tender.
  • You can add nuts or chocolate chips to the batter for added texture and flavor.
  • Store pumpkin bread wrapped in plastic or in an airtight container to maintain freshness.
  • Loaves can be frozen for up to 3 months; thaw at room temperature before serving.
