Instructions

  1. Heat olive oil: Place a non-stick pan over medium heat and add 2 tablespoons of extra-virgin olive oil, allowing it to warm up evenly.
  2. Beat eggs: In a bowl, crack 4 large eggs and beat them until the yolks and whites are well combined.
  3. Add vegetables: Stir in 1 cup of mixed diced vegetables including onions, carrots, and bell peppers into the pan with the warmed oil.
  4. Cook vegetables: Sauté the mixed vegetables for about 2 minutes until they begin to soften but remain crisp.
  5. Pour eggs and add seasonings: Pour the beaten eggs over the cooked vegetables in the pan, then add salt, freshly ground pepper, 1/2 teaspoon smoked paprika, and 1/2 teaspoon dried tarragon or herbs for flavor.
  6. Add meat and cheese: Sprinkle 1/2 cup of diced Spam or cooked meat and 1/2 cup of cheddar or mozzarella cheese evenly across the eggs.
  7. Add greens and fold omelette: Place a handful of baby spinach or spring mix on one side of the cooking omelette, carefully fold the other half over the filling, and allow the cheese to melt.
