Sweet Potatoes:

  • 2 large sweet potatoes

Eggs:

  • 4 large eggs

Other Ingredients:

  • 1/2 cup cooked and crumbled bacon or turkey bacon
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C). Wash sweet potatoes and prick them with a fork. Roast for 45–55 minutes until tender.
