Description

Lunch Lady Brownies are a nostalgic treat known for their rich, fudgy texture and decadent chocolate frosting. This classic recipe combines a deep cocoa brownie base with a smooth, creamy frosting that creates the perfect balance of sweetness and chocolate flavor. Ideal for afternoon snacks or dessert, these brownies are sure to satisfy any chocolate lover’s cravings.

Ingredients

Scale

Brownie Base

  • 1 cup salted butter (melted)
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

Chocolate Frosting

  • 1/4 cup salted butter (softened)
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Instructions

  1. Prepare the Brownie Batter: In a medium bowl, combine the melted salted butter with unsweetened cocoa powder, stirring until smooth. In a large mixing bowl, whisk together the all-purpose flour and granulated sugar. Add the cocoa mixture to the dry ingredients, then beat in the eggs one at a time, followed by the vanilla extract, until the batter is smooth and well combined.
  2. Bake the Brownies: Preheat your oven to 350°F (177°C). Grease a 9×13 inch baking pan or line it with parchment paper. Pour the brownie batter evenly into the prepared pan. Bake for approximately 30 minutes or until a toothpick inserted into the center comes out with moist crumbs but not wet batter. Remove from oven and allow to cool completely in the pan on a wire rack.
  3. Make the Chocolate Frosting: In a medium bowl, beat together the softened salted butter, 2% milk, and unsweetened cocoa powder until smooth. Gradually add the powdered sugar, beating continuously, until the frosting reaches a fluffy and spreadable consistency.
  4. Frost the Brownies: Once the brownies are completely cooled, spread the chocolate frosting evenly over the top using a spatula or knife. Chill the brownies in the refrigerator to set the frosting if desired, then cut into 16 squares and serve.

Notes

  • Ensure the brownies are completely cool before frosting to prevent melting.
  • You can substitute salted butter with unsalted butter and add a pinch of salt.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • For a richer flavor, use Dutch-processed cocoa powder instead of natural cocoa powder.
