- ½ cup roasted red peppers (chopped)
- ½ cup crumbled feta cheese

- 3 tablespoons fresh parsley (chopped)
Dressing:

- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Combine Ingredients: In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, olives, roasted red peppers, feta, red onion, and parsley.
- Prepare Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic powder, salt, and pepper until well blended.
