Pasta Salad:

  • 3 cups cooked rotini pasta (cooled)
  • 2 cups cooked chicken breast (diced or shredded)
  • 1 cup cherry tomatoes (halved)
  • 1 small cucumber (diced)
  • ½ cup Kalamata olives (pitted and sliced)
  • ½ cup roasted red peppers (chopped)
  • ½ cup crumbled feta cheese
  • ¼ cup red onion (thinly sliced)
  • 3 tablespoons fresh parsley (chopped)

Dressing:

  • â…“ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Combine Ingredients: In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, olives, roasted red peppers, feta, red onion, and parsley.
  2. Prepare Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, garlic powder, salt, and pepper until well blended.
  3. Toss Salad: Pour dressing over the pasta mixture and toss until evenly coated.
