Instructions

  2. Sauté Aromatics: While the cauliflower roasts, heat the remaining 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until translucent. Then add the minced garlic and cook for an additional minute.
  3. Toast the Spices: Stir in the ground cumin, turmeric, smoked paprika, and coriander. Cook the mixture for 30 seconds, allowing the spices to toast and release their fragrances.
  4. Simmer the Soup: Add the roasted cauliflower and the broth to the pot. Bring everything to a boil, then reduce the heat and let the soup simmer gently for 10 minutes to meld the flavors.
