Instructions
- Heat the oil: Warm the olive oil in a medium skillet over medium heat to prepare for sautéing the vegetables.
- Sauté onion and pepper: Add diced onion and green pepper to the skillet. Cook, stirring occasionally, until both are softened and fragrant, about 5 minutes.
- Add tomatoes and season: Stir in the diced or grated tomatoes along with salt, black pepper, and red pepper flakes. Cook until the tomatoes break down and form a saucy mixture, approximately another 5 minutes.
- Add eggs: Crack the eggs directly into the tomato mixture. Allow them to rest for a moment to start setting before gently stirring to combine. Continue cooking, stirring occasionally, until the eggs are softly set but remain creamy.
- Finish and garnish: Remove the skillet from heat. Sprinkle chopped fresh parsley evenly over the top. Serve the menemen immediately, ideally with crusty bread.
Notes
- For a richer and creamier texture, add a small spoonful of butter when cooking the eggs.
- To enjoy a more traditional version, lightly stir the eggs, leaving some parts less mixed for varied texture.
- Serve hot and fresh, as menemen does not store well once cooked.
