Description

Menemen is a traditional Turkish breakfast dish featuring scrambled eggs cooked with ripe tomatoes, onions, and green peppers, seasoned with spices and fresh parsley. This simple and flavorful meal is perfect for a hearty start to your day, enjoyed best with crusty bread.

Ingredients

Scale

Vegetables

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 green pepper or Turkish green pepper, diced
  • 2 ripe tomatoes, diced or grated

Spices

  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, to taste

Eggs and Garnish

  • 4 large eggs
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat the oil: Warm the olive oil in a medium skillet over medium heat to prepare for sautéing the vegetables.
  2. Sauté onion and pepper: Add diced onion and green pepper to the skillet. Cook, stirring occasionally, until both are softened and fragrant, about 5 minutes.
  3. Add tomatoes and season: Stir in the diced or grated tomatoes along with salt, black pepper, and red pepper flakes. Cook until the tomatoes break down and form a saucy mixture, approximately another 5 minutes.
  4. Add eggs: Crack the eggs directly into the tomato mixture. Allow them to rest for a moment to start setting before gently stirring to combine. Continue cooking, stirring occasionally, until the eggs are softly set but remain creamy.
  5. Finish and garnish: Remove the skillet from heat. Sprinkle chopped fresh parsley evenly over the top. Serve the menemen immediately, ideally with crusty bread.

Notes

  • For a richer and creamier texture, add a small spoonful of butter when cooking the eggs.
  • To enjoy a more traditional version, lightly stir the eggs, leaving some parts less mixed for varied texture.
  • Serve hot and fresh, as menemen does not store well once cooked.
