Instructions
- Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a silicone muffin tin or line a regular muffin tin with paper liners to prevent sticking.
- Whisk Eggs: In a large bowl, whisk together the eggs, milk, salt, and pepper thoroughly until the mixture is smooth and well combined.
- Fill Muffin Cups: Pour the egg mixture into each muffin cup, filling about one-third of the way full to allow space for the fillings.
- Add Fillings: Add about one teaspoon of each desired optional filling (such as spinach, green onion, bell peppers, ham, or tomato) into each muffin cup. Then, fill the cups about two-thirds full with the remaining egg mixture.
- Top with Cheese: Sprinkle approximately one teaspoon of shredded cheddar cheese on top of each filled muffin cup.
- Bake: Place the muffin tin in the preheated oven and bake for 30 to 40 minutes, or until the egg bites are fully set and the tops turn lightly golden brown. Remove from the oven and allow to cool slightly before serving.
