These Mini Egg Brownie Bites are a delightful treat perfect for Easter or any occasion. Rich, chocolaty, and studded with mini chocolate eggs, they are sure to be a hit with both kids and adults.

Brownie Bites:
- 1/2 cup unsalted butter (melted)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup semi-sweet chocolate chips
- 1 cup mini chocolate eggs (such as Cadbury Mini Eggs), coarsely chopped
Instructions
- Preheat the Oven: Preheat the oven to 350°F and lightly grease a mini muffin tin or line with mini cupcake liners.
- Mix Wet Ingredients: In a medium bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract and mix until well combined.
- Add Dry Ingredients: Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined, then fold in chocolate chips and half of the chopped mini eggs.
- Fill Muffin Tin: Spoon the batter evenly into the mini muffin tin, filling each about 3/4 full. Top each brownie bite with a few more chopped mini eggs.
- Bake: Bake for 12–15 minutes, or until the centers are just set and a toothpick inserted comes out with a few moist crumbs.
- Cool and Serve: Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a fudgier texture, slightly underbake and let the bites finish setting as they cool.
- Store in an airtight container for up to 4 days. You can also freeze them for up to 2 months.
