Description

Delicious Mini Taco Cupcakes featuring zesty ground beef and melted cheese nestled in crispy wonton wrappers, perfect for appetizers, party snacks, or a fun dinner twist. These bite-sized treats offer classic taco flavors in a convenient, handheld form.

Ingredients

Scale

Ground Beef Mixture

  • 1 tablespoon olive oil
  • 1/2 pound ground beef
  • 1/2 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon taco seasoning
  • 1/4 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese

Other Ingredients

  • 24 wonton wrappers
  • Nonstick cooking spray

Optional Toppings

  • Sour cream
  • Diced tomatoes
  • Sliced jalapeños
  • Chopped cilantro
  • Avocado
  • Hot sauce

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick cooking spray to prevent sticking.
  2. Cook the Beef Mixture: Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and cook until softened, about 2-3 minutes. Add the minced garlic and ground beef, cooking until the beef is browned and breaking it apart as it cooks. Drain excess fat. Stir in the taco seasoning and salsa, then simmer for 2-3 minutes before removing from heat.
  3. Assemble Taco Cupcakes: Place one wonton wrapper into each muffin cup, pressing gently to form a base. Spoon a small amount of the beef mixture on top and sprinkle with cheese. Add a second wonton wrapper, then repeat with another layer of beef and cheese on top.
  4. Bake: Bake in the preheated oven for 12-15 minutes, until the wonton edges turn golden and crispy and the cheese has melted.
  5. Cool and Serve: Allow the taco cupcakes to cool for a few minutes in the pan. Carefully remove them, then top with your choice of sour cream, diced tomatoes, jalapeños, chopped cilantro, avocado, or hot sauce. Serve warm.
