Description

This Monterey Chicken recipe is a delicious and easy-to-make dish that combines juicy chicken breasts with savory barbecue sauce, gooey melted cheese, crispy bacon, and fresh toppings. Perfect for a quick weeknight dinner or a casual weekend meal.

Ingredients

Scale

Chicken:

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Toppings:

  • 1/2 cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 4 slices cooked bacon, chopped
  • 1 medium tomato, diced
  • 1/4 cup green onions, sliced
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Season the chicken: Season the chicken breasts with salt, pepper, garlic powder, and smoked paprika.
  3. Sear the chicken: Heat olive oil in a large oven-safe skillet. Sear the chicken for 3–4 minutes per side until browned.
  4. Add toppings: Remove from heat, brush with barbecue sauce, top with cheese and bacon.
  5. Bake: Transfer the skillet to the oven and bake for 15–18 minutes until cooked through and cheese is melted.
  6. Finish and serve: Sprinkle with tomatoes and green onions. Garnish with parsley if desired. Serve hot.

Notes

  • You can substitute Monterey Jack with a blend of cheddar and mozzarella if preferred.
  • For a smoky twist, try using chipotle barbecue sauce.
  • Serve with mashed potatoes, rice, or a side salad for a complete meal.
