- Melt the coating: Melt the white chocolate chips in a microwave-safe bowl in 20-second increments, stirring well between each to ensure the chocolate is smooth and fully melted.
- Coat the cheesecake balls: Dip each chilled ball into the melted white chocolate, using a fork to let excess chocolate drip off. Return the coated balls to the parchment-lined tray. Sprinkle with extra graham cracker crumbs or a pinch of cinnamon if desired.
- Set the coating: Chill the coated balls in the refrigerator for about 15 minutes, or until the white chocolate sets solid. Serve chilled.
