Chicken Casserole:

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)

Sauce:

  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can water (use empty soup can)
  • 1 packet onion soup mix
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Garnish:

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Layer rice: Spread uncooked rice evenly in the bottom of the dish.
  3. Mix sauce: In a medium bowl, mix cream of chicken soup, cream of mushroom soup, and water until well combined. Pour over rice and stir gently.
  4. Season chicken: Season chicken breasts with garlic powder and pepper, then place on top of the rice.
  5. Add onion soup mix: Sprinkle onion soup mix evenly over the top.
  6. Bake: Cover dish tightly with foil and bake for 1 hour and 30 minutes without lifting the foil.
  7. Rest and garnish: Remove from oven, let rest for 5 minutes, then uncover and garnish with fresh parsley if desired.
