Instructions

  1. Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 8–10 minutes, stirring occasionally, until they are golden brown and beginning to soften.
  2. Brown the Beef and Onion: Push the potatoes to one side of the skillet, then add the ground beef and chopped onion to the empty side. Cook for 5–6 minutes until the beef is browned and cooked through, breaking it up as it cooks. Drain excess grease if necessary.
  3. Add Seasonings and Broth: Stir in the minced garlic, paprika, dried thyme, salt, and black pepper to the beef and potatoes. Mix everything thoroughly, then pour in the beef broth. Cover the skillet and cook for another 5–7 minutes until the potatoes are tender.
  4. Melt the Cheese: Uncover the skillet and sprinkle the shredded cheddar cheese evenly over the top. Cover again and cook for 1–2 minutes until the cheese is fully melted.
