Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes

  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

BBQ Sauce:

  • ½ cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prepare Sweet Potatoes: Toss sweet potato cubes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on the baking sheet in a single layer and bake for 15 minutes.
  3. Make BBQ Sauce: In a bowl, combine barbecue sauce, honey, and apple cider vinegar.
  4. Cook Chicken: Remove sweet potatoes from the oven. Place chicken breasts in the center of the pan, brush with half of the sauce, and bake for 20–25 minutes, flipping halfway and brushing with more sauce.
