Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Sauce:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • Lemon slices and fresh basil leaves for garnish (optional)

Instructions

  1. Pound the chicken: Pound the chicken breasts to an even thickness and season with salt and pepper. Lightly dredge in flour, shaking off any excess.
  2. Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 4–5 minutes per side, or until golden and cooked through. Remove the chicken and set aside.
  3. Prepare the sauce: In the same skillet, reduce heat to medium and add the garlic. Sauté for 30 seconds, then stir in the chicken broth, lemon juice, and lemon zest. Simmer for 2–3 minutes, scraping up any browned bits from the pan.
  4. Finish the dish: Stir in the heavy cream and Parmesan cheese. Simmer for another 2–3 minutes until slightly thickened. Add the chopped basil and return the chicken to the pan, spooning the sauce over the top. Simmer for another 2–3 minutes to warm through.
  5. Serve: Garnish with lemon slices and more basil if desired. Serve hot with rice, pasta, or crusty bread.

Notes

  • For a dairy-free version, omit Parmesan and cream and finish the sauce with a splash of coconut milk or additional broth.
