Ingredients
Scale
Sausage
- 14 ounces smoked sausage (see notes)
- 2 tablespoons butter
Vegetables & Seasoning
- 2 pounds yellow potatoes (Yukon Gold recommended), about 4-6 medium, cut into 1-inch chunks
- 1 pound green beans, fresh, rinsed, and trimmed
- ½ teaspoon paprika (smoked paprika preferred)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
Liquids
- 1 ½ cups low-sodium chicken broth
Instructions
- Prep Ingredients: Slice the smoked sausage into ½-inch rounds and cut the potatoes into 1-inch chunks. Rinse and trim the green beans.
- Mix Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, and black pepper thoroughly.
- Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat it over medium-high heat. Add the sliced sausage and cook, stirring frequently, until browned, about 4-5 minutes. Remove the sausage from the pot and set aside.
- Sauté Potatoes: Add butter to the pot over medium-high heat. Add the potatoes along with half of the seasoning mixture. Cook, stirring occasionally, until the potatoes start to brown, about 5-6 minutes.
- Add Green Beans and Broth: Add the green beans to the pot and sprinkle the remaining seasoning over the potatoes and beans. Pour the low-sodium chicken broth over the vegetables.
- Cook: Cover the pot and reduce the heat to medium. Let the mixture cook for about 15 minutes, or until the potatoes and green beans are tender when pierced with a fork.
- Combine and Serve: Return the browned sausage to the pot, stir to combine all ingredients evenly, and serve hot.
Notes
- Smoked sausage varieties such as Andouille, Kielbasa, or smoked Polish sausage work well for this recipe.
- Using smoked paprika will enhance the smoky flavor, but regular paprika can be used as a substitute.
- Low-sodium chicken broth helps control the saltiness of the dish, but regular broth or vegetable broth can be used.
- Feel free to add diced onions along with the potatoes for extra flavor.
