Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Make the Crust: In a medium bowl, combine the crushed Oreo cookies with the melted butter until the mixture resembles wet sand. Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
- Bake the Crust: Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly.
- Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add the granulated sugar and vanilla extract, beating until well combined.
- Add Eggs: Add the eggs one at a time, mixing on low speed and scraping the bowl after each addition to ensure even incorporation.
- Incorporate Sour Cream and Oreos: Mix in the sour cream until just combined, then gently fold in the chopped Oreo cookies to preserve their texture.
- Assemble and Bake: Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 35–40 minutes or until the center is set but still slightly jiggly.
- Cool in Oven: Turn off the oven and crack the door open, allowing the cheesecake to cool inside for 1 hour to prevent cracking.
- Chill: Transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight to fully set.
- Serve: Use the parchment paper overhang to lift the cheesecake from the pan. Slice into 9 squares, top with whipped cream and extra crushed Oreos if desired, and serve chilled.

- For an extra creamy crust, use double-stuffed Oreos instead of regular Oreos.
