This comforting Oven Baked Sausages with Potatoes, Vegetables, and Gravy recipe combines tender baby potatoes, sweet carrots, and red onions roasted alongside juicy pork or chicken sausages. The meal is finished with a rich homemade gravy made from butter, flour, and broth, making it a hearty and satisfying dish perfect for a family dinner.

Ingredients

Scale

Vegetables

  • 700g / 1.4 lb baby potatoes, halved
  • 3 carrots, peeled and cut into 2″/5cm pieces
  • 2 red onions, each cut into 8 wedges
  • 2 garlic cloves, minced

Seasonings & Oil

  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Oil spray (optional)

Sausages

  • 810 sausages (500-700g / 1-1.4lb), such as pork or chicken sausages

Gravy

  • 2 tbsp / 30g melted unsalted butter
  • 2 1/2 tbsp plain / all-purpose flour
  • 2 cups / 500 ml beef broth (or chicken broth)
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat oven: Set your oven to 200°C (390°F) for standard ovens or 180°C (350°F) for fan/convection ovens, and let it fully preheat to ensure even cooking.
  2. Prepare vegetables: In a large bowl, combine the halved baby potatoes, peeled and cut carrots, cut red onion wedges, and minced garlic. Toss them well with olive oil, dried thyme, dried oregano, salt, and pepper until everything is evenly coated for a flavorful base.
  3. Add sausages: Briefly toss the sausages with the seasoned vegetables in the same bowl to give them a light coating. Transfer the mixture into a large roasting pan, stacking vegetables about two layers deep, then arrange the sausages on top to ensure they cook evenly.
  4. Make gravy: Using the same bowl, whisk together the melted butter and flour until smooth. Gradually add a small splash of broth while whisking to loosen the mixture, then stir in the remaining broth until well combined. Carefully pour this gravy down the side of the roasting pan, avoiding pouring directly over the sausages and vegetables so they roast properly.
  5. Optional oil spray: Lightly spray the sausages with oil to promote browning and crisping during baking. Place the roasting pan in the oven and bake for 25 minutes.
  6. Turn and continue baking: Remove the pan from the oven, carefully turn the sausages over, and optionally spray again with oil for better browning. Return the pan to the oven and bake for an additional 25 minutes, or until the sausages are nicely browned and the potatoes are tender when pierced with a fork.
  7. Serve: Plate the baked sausages alongside the roasted vegetables, pour the savory gravy over the top, and garnish with fresh thyme leaves if desired. Serve hot for a warming and delicious meal.

Notes

  • Use either pork or chicken sausages according to preference; cooking times remain the same.
  • For extra crispy sausages, ensure they are evenly coated with oil spray before baking.
  • You can swap the beef broth for chicken broth if preferred.
  • Fresh thyme leaves garnish adds a nice aroma but is optional.
  • Adjust salt and pepper according to taste after baking if needed.
