Description

A comforting and hearty meal of oven-baked sausages with a medley of potatoes, vegetables, and a savory gravy. This British-inspired dish is easy to make and perfect for a cozy family dinner.

Ingredients

Scale

Potato and Vegetable Mix:

  • 8 pork sausages
  • 1 ½ pounds baby potatoes (halved)
  • 2 carrots (peeled and sliced)
  • 1 red onion (cut into wedges)
  • 1 red bell pepper (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Gravy:

  • 2 tablespoons all-purpose flour
  • 1 ½ cups beef or chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon butter
  • Optional fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare the vegetables: In a large roasting pan, combine potatoes, carrots, onion, and bell pepper. Drizzle with olive oil, season with thyme, garlic powder, salt, and pepper, and toss to coat.
  3. Add the sausages: Nestle the sausages on top of the vegetables.
  4. Bake: Bake for 35–40 minutes, flipping the sausages halfway through, until browned and vegetables are tender.
  5. Make the gravy: In a saucepan, melt butter, whisk in flour, then slowly add broth and Worcestershire sauce. Simmer until thickened.
  6. Serve: Pour gravy over the sausage and vegetables or serve on the side. Garnish with parsley if desired.

Notes

  • Use chicken or turkey sausages for a lighter option.
  • Add green beans or zucchini for extra veggies.
  • For richer flavor, use homemade stock.
