For the Pancake Sausage Casserole

  • 2 cups buttermilk pancake mix
  • 1 lb breakfast sausage (bulk or links)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pure maple syrup
  • 2 tbsp butter (for greasing)


Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (175°C) and grease a large baking dish thoroughly with butter to prevent sticking.
  2. Cook the sausage: In a skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon until browned and crumbly. Once cooked, drain off any excess grease to avoid a greasy casserole.
  3. Mix the batter: In a large bowl, combine the buttermilk pancake mix, whole milk, and eggs. Stir just until mixed; lumps in the batter are okay for a tender texture.
  4. Add syrup and sausage: Fold in half of the pure maple syrup along with some of the cooked sausage pieces to distribute the flavors evenly.
  5. Layer the casserole: Pour half of the batter into the greased baking dish. Spread the remaining cooked sausage evenly over the batter layer. Then pour the remaining batter on top to create a layered effect.
  6. Bake: Bake the casserole uncovered in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is springy to the touch when gently pressed.
