Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
Peach Layer:
- 2 cups fresh or canned peaches, chopped and drained if canned
- 1/2 tsp ground cinnamon
- 2 tbsp brown sugar
Crumble Topping:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup cold butter, cubed
Instructions
- Prepare Crust: Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into pan and bake.
- Make Cheesecake Filling: Beat cream cheese and sugar, add eggs one at a time, then mix in vanilla and sour cream. Pour over crust.
- Add Peach Layer: Combine peaches, cinnamon, and brown sugar. Spread over cheesecake layer.
- Make Crumble Topping: Mix flour and brown sugar, cut in cold butter until crumbly. Sprinkle over peaches.
- Bake: Bake for 40–45 minutes until set. Cool and chill before cutting into bars.
Notes
- Use ripe but firm peaches for best results.
- Bars can be made a day ahead and stored in the fridge.
- For extra flavor, add a pinch of nutmeg to the crumble topping.
