Filling:
- 4 cups sliced fresh peaches (or 2 cans sliced peaches, drained)
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
Topping:
- 1 cup all-purpose flour
- 1 cup milk
- 1 cup granulated sugar (for batter)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (melted)
Instructions
- Preheat the oven to 350°F.
- In a large saucepan over medium heat, combine the peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook for 5–7 minutes, stirring occasionally, until the mixture is bubbly and slightly thickened. Remove from heat.
- In a separate bowl, whisk together the flour, baking powder, salt, 1 cup sugar, and milk until smooth.
- Pour the melted butter into a 9×13-inch baking dish. Pour the batter over the butter—do not stir.
- Spoon the peach mixture evenly over the batter—again, do not stir.
- Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
- Let cool slightly before serving.
Notes
- This cobbler is delicious served warm with a scoop of vanilla ice cream.
- You can substitute frozen peaches if fresh aren’t available—just thaw and drain before using.
