  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch

Topping:

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 cup granulated sugar (for batter)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large saucepan over medium heat, combine the peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Cook for 5–7 minutes, stirring occasionally, until the mixture is bubbly and slightly thickened. Remove from heat.
  3. In a separate bowl, whisk together the flour, baking powder, salt, 1 cup sugar, and milk until smooth.
  4. Pour the melted butter into a 9×13-inch baking dish. Pour the batter over the butter—do not stir.
  5. Spoon the peach mixture evenly over the batter—again, do not stir.
  6. Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  7. Let cool slightly before serving.

  • This cobbler is delicious served warm with a scoop of vanilla ice cream.
