  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips

For the cheesecake layer:

  • 8 oz cream cheese (softened)
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make Cookie Base: Cream together butter, peanut butter, sugars, egg, and vanilla. Mix in dry ingredients and chocolate chips. Press two-thirds of dough into pan.
  3. Prepare Cheesecake Layer: Beat cream cheese and sugar until smooth. Add egg and vanilla. Pour over cookie base.
  4. Bake: Crumble remaining cookie dough over cheesecake layer. Bake for 30-35 minutes until set. Cool and chill before slicing.
