  4. Add tomatoes and simmer: Add the diced tomatoes, red wine vinegar, salt, and pepper. Reduce the heat to low and let the mixture simmer gently for 20-25 minutes, stirring occasionally, until the peppers are tender and the sauce has thickened.
  5. Adjust seasoning: Taste and adjust seasoning with additional salt and pepper as needed.
  6. Serve: Serve the peperonata warm or at room temperature, garnished with chopped fresh basil or parsley if desired.
