Pickling Liquid:

  • 3/4 cup apple cider vinegar
  • 3/4 cup water
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon whole black peppercorns
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare Pickling Liquid: In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat over medium heat until dissolved. Remove from heat and let cool slightly.
  2. Layer Ingredients: In a clean glass jar, layer pineapple, jalapeños, and red onion. Add peppercorns and red pepper flakes.
  3. Add Pickling Liquid: Pour warm liquid over the ingredients until submerged. Let cool, seal the jar, and refrigerate.
  4. Marinate: Allow pickles to marinate for at least 4 hours, preferably overnight, before serving.
