Pickling Liquid:
- 3/4 cup apple cider vinegar
- 3/4 cup water
- 2 tablespoons granulated sugar
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon whole black peppercorns
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Prepare Pickling Liquid: In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat over medium heat until dissolved. Remove from heat and let cool slightly.
- Layer Ingredients: In a clean glass jar, layer pineapple, jalapeños, and red onion. Add peppercorns and red pepper flakes.
- Add Pickling Liquid: Pour warm liquid over the ingredients until submerged. Let cool, seal the jar, and refrigerate.
- Marinate: Allow pickles to marinate for at least 4 hours, preferably overnight, before serving.
Notes

- For a sweeter version, add an extra tablespoon of sugar.
