Description

Ingredients

Cookie Dough:

1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped roasted pistachios
1/2 cup white chocolate chips

Additional:

1/2 cup pistachio cream (plus extra for drizzling)
Optional sea salt for topping


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cream butter and sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add egg and vanilla: Beat in the egg and vanilla extract until fully combined.
  4. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Add mix-ins: Fold in the chopped pistachios and white chocolate chips.
  6. Prepare skillet: Press about two-thirds of the cookie dough into a greased 9-inch oven-safe skillet.
  7. Add pistachio cream: Spread the pistachio cream evenly over the dough.
  8. Top with remaining dough: Drop the remaining dough on top in spoonfuls, gently spreading to partially cover the cream.
  9. Bake: Bake for 20–25 minutes, or until the edges are golden and the center is just set.
  10. Cool and serve: Let cool for 10–15 minutes before serving. Drizzle with extra pistachio cream and sprinkle with sea salt if desired.
