These fantastic little rolls are a speedy and simple meal that you can grab on the go.
Great for long summer days, they can be made using leftovers or whatever you have on hand.
They require little effort to create and are a healthy meal or snack for the whole family.
The biggest bonus is that kids love the small package and the big flavor they hold within is pleasing to the palate.
Prep Time: 30 mins • 6 Servings
- 2-3 cups romaine lettuce, sliced thin
- 1 1/2 cup spinach, chopped finely
- 1 cup sliced carrot
- 1/2 cup celery, chopped finely
- 1 1/2 tbsp oil
- 12 rice paper wrappers
- 1/2 cup wasabi-coated green peas
- 2 cups pork, cooked and sliced thin
- Salad dressing for serving
- 1/2 cup cherries (dried), finely chopped
Cook sliced pork tenderloin until fully done.
In a bowl, combine cooked pork, spinach, carrot, lettuce, celery, and cherries. Drizzle with oil and toss to coat.
Fill a large dish halfway with water and carefully dip a rice paper wrapper.
Allow the paper to soak for about 30-40 seconds and remove, allowing excess water to drip off.
Next, place the soaked paper on a flat surface and layer the veggie mixture across the bottom portion.
Fold both ends toward the center and carefully fold the bottom over the filling, rolling the package up tightly. Then, place rolls on a plate with the seam facing down.
Serve with your choice of dressing.
