Description

Dry Ingredients:

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/4 cup natural peanut butter or almond butter
  • 1/4 cup coconut sugar or granulated sweetener of choice
  • 1/4 cup unsweetened almond milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional:

  • 1/4 cup mini chocolate chips (sugar-free if desired)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together the almond flour, protein powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate large bowl, beat together the nut butter, coconut sugar, egg, almond milk, and vanilla extract until smooth.
  4. Form dough: Add the dry ingredients to the wet ingredients and stir until a dough forms. Fold in the chocolate chips.
  5. Bake: Using a tablespoon or cookie scoop, portion the dough onto the baking sheet, flatten slightly, and bake for 8–10 minutes until lightly golden.
  6. Cool: Allow cookies to cool on the baking sheet before transferring to a wire rack.

Notes

  • For softer cookies, remove them slightly underbaked from the oven as they will firm up as they cool.
  • To make them dairy-free, use a plant-based protein powder.
