Instructions
- Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add Wet Ingredients: Beat in the pumpkin puree, egg, and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Chill Dough: Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat and Roll: Preheat the oven to 350°F (175°C) and roll out one disc of dough at a time on a floured surface to 1/4 inch thickness.
- Cut and Bake: Cut into desired shapes using cookie cutters and place on baking sheets. Bake for 9 to 11 minutes until edges are golden.
- Cool and Decorate: Let cool on baking sheet for 2 minutes, then transfer to a wire rack. Decorate with icing once cooled.
Notes
- For more defined shapes, chill the cut cookie shapes on the baking sheet for 10 minutes before baking.
