Description

This Reuben Bake is a delicious casserole layering savory corned beef, tangy sauerkraut, and melted Swiss cheese between buttery crescent roll dough, all topped with a golden egg wash and optional caraway seeds. It’s an easy, comforting twist on the classic Reuben sandwich perfect for feeding a crowd.

Base and Dough

  • 1 (8 oz) tube refrigerated crescent roll dough
  • Nonstick cooking spray
  • 1 egg, beaten
  • 1 teaspoon caraway seeds (optional)

Fillings

  • 1/2 cup Thousand Island dressing
  • 1/2 pound sliced deli corned beef
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 1/2 cups shredded Swiss cheese


Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish using nonstick spray to prevent sticking.
  2. Prepare bottom crust: Unroll the crescent roll dough and press half of it evenly into the bottom of the baking dish, sealing any seams to ensure no filling leaks out. Bake this crust for 8 to 10 minutes until it turns lightly golden.
  3. Add first layers: Remove the baked crust from the oven. Spread half of the Thousand Island dressing evenly over it. Layer half of the sliced corned beef on top, then add the entire cup of drained sauerkraut, followed by the remaining corned beef slices.
  4. Add cheese and top crust: Sprinkle the shredded Swiss cheese evenly over the layered fillings. Spread the remaining Thousand Island dressing on the underside of the second half of the crescent dough and carefully place it dressing-side down over the cheese layer. Press the edges to seal the casserole.
  5. Finish and bake: Brush the top crust with the beaten egg. If desired, sprinkle with caraway seeds for extra flavor and crunch. Bake for 18 to 22 minutes, until the top is golden brown and the cheese is bubbly.
  6. Rest and serve: Allow the bake to rest for 5 to 10 minutes to set before slicing and serving warm.

Notes

  • For a crispier crust, bake uncovered on a lower oven rack during the last few minutes.
  • Try using rye bread dough or puff pastry instead of crescent roll dough for a different texture.
  • Serve with extra Thousand Island dressing or mustard on the side for added flavor.
