Beef Roast:
- 3–4 pound beef roast (such as top sirloin or chuck)
Herb Paste:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary (or 1 teaspoon dried)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder

- 1 cup beef broth
Instructions
- Preheat the Oven: Preheat the oven to 450°F (230°C).
- Prepare Herb Paste: Mix olive oil, garlic, rosemary, thyme, salt, pepper, and onion powder in a bowl to make a paste.
- Season the Roast: Pat the beef roast dry, rub the herb mixture all over it.
- Roast: Place the roast on a rack in a roasting pan, pour beef broth into the pan. Sear at 450°F for 15 minutes, then roast at 325°F for 1.5-2 hours.
- Rest and Serve: Remove from oven, tent with foil, let rest for 15–20 minutes before slicing.
