Ingredients
Scale
Roasted Strawberries
- 1 pound fresh strawberries, hulled and halved
- 2 tablespoons granulated sugar
- 1 tablespoon honey
- 1 teaspoon fresh lemon juice
Whipped Ricotta
- 1 cup whole milk ricotta cheese
- 2 tablespoons heavy cream
- 1 tablespoon powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
Toast
- 4 slices thick cut artisan bread (such as sourdough or brioche)
- 1 tablespoon olive oil for brushing
Garnish (optional)
- Fresh mint leaves
- Balsamic glaze for drizzling
Instructions
- Roast Strawberries: Preheat your oven to 400°F. On a baking sheet, toss the hulled and halved strawberries with granulated sugar, honey, and fresh lemon juice. Spread them out in a single layer and roast for 18 to 22 minutes, or until the strawberries become soft and syrupy. Remove from oven and let them cool slightly.
- Whip Ricotta: While the strawberries are roasting, place ricotta cheese, heavy cream, powdered sugar, vanilla extract, and a pinch of salt into a bowl. Whip this mixture using a hand mixer or a whisk until it becomes smooth and fluffy.
- Toast the Bread: Lightly brush both sides of each bread slice with olive oil. Toast the bread in a skillet over medium heat or in the oven until golden and crisp, about 3 to 5 minutes per side.
- Assemble the Toast: Spread a generous layer of the whipped ricotta onto each toasted bread slice. Spoon the roasted strawberries along with their syrup on top.
- Garnish and Serve: Optionally, garnish with fresh mint leaves and drizzle with balsamic glaze for added flavor and presentation. Serve immediately while the toast is crisp and the strawberries are warm.
Notes
- For a lighter version, use part-skim ricotta and omit the heavy cream.
- You can substitute maple syrup for honey to add a different sweetness profile.
- Try topping the toast with chopped pistachios or a sprinkle of lemon zest for added texture and brightness.
