Description

This Rosemary Dijon Chicken recipe delivers a succulent and flavorful meal with tender chicken breasts seared to golden perfection and topped with a vibrant sauce made from Dijon mustard, fresh rosemary, garlic, and lemon juice. Ready in just 25 minutes, it’s an ideal weeknight dinner that’s both simple and impressive.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt & black pepper, to taste

Sauce

  • 3 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
  • 1 tbsp lemon juice
  • ½ cup chicken broth

Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and black pepper to enhance flavor and ensure even cooking.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4 to 5 minutes on each side until they develop a golden brown crust and reach an internal temperature of 165°F (74°C). Once done, remove the chicken from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the minced garlic and chopped rosemary. Sauté for about 30 seconds until fragrant. Then stir in Dijon mustard, lemon juice, and chicken broth. Allow the mixture to simmer gently for 2 to 3 minutes until it thickens slightly.
  4. Combine and finish cooking: Return the seared chicken breasts to the skillet. Spoon the rosemary Dijon sauce over the chicken and cook for an additional 1 to 2 minutes to meld the flavors and warm the chicken through.
  5. Serve: Plate the chicken and generously spoon extra sauce over the top. This dish pairs beautifully with roasted potatoes or steamed vegetables for a complete meal.
