- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

- Diced tomatoes (reserved 1 tbsp from Rotel)
- Fresh parsley or cilantro, chopped
- Green onions, sliced
Instructions
- Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add the ground beef and break it apart using a wooden spoon. Cook for about 5 minutes until no pink remains and the meat is fully cooked. Drain any excess fat from the pan.
- Add Seasoning and Rotel: Reduce heat to medium, then add the taco seasoning along with the can of Rotel (including the juices). Stir to combine and cook for 2 to 3 minutes until the mixture is well blended and begins to simmer. Optionally, reserve 1 tablespoon of the diced tomatoes to use as a garnish later.
- Melt the Cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously to ensure the cheese melts smoothly and combines evenly with the meat and tomato mixture, creating a creamy dip.
- Garnish and Serve: Optionally sprinkle the dip with the reserved diced tomatoes, chopped parsley or cilantro, and sliced green onions. Serve immediately with tortilla chips, crostini, or toasted baguettes for dipping and enjoying.
Notes
- Use lean ground beef to reduce excess fat, but medium or extra lean will also work.
- The taco seasoning can be homemade using equal parts chili powder, garlic powder, onion powder, paprika, and cumin if preferred.
- Velveeta cheese melts smoothly for creamy texture; you can substitute with processed cheese or a blend of cheddar and cream cheese, though texture will vary.
- Reserve some diced tomatoes from the Rotel can for extra vibrant garnish and flavor contrast.
