For the Steaks
- 1 cup mushrooms, finely chopped
- 1/4 cup onion, finely chopped
- 1 & 1/2 pounds ground beef
- 1 egg
- 1/3 cup panko breadcrumbs
- 2 tablespoons tomato paste
- 2 tablespoons whole grain mustard
- 1 teaspoon minced garlic
- 1 tablespoon Worcestershire sauce
- 1/4 teaspoon liquid smoke (optional)
- 1 & 1/4 teaspoons kosher salt
- 3/4 teaspoon black pepper
- 1 teaspoon onion powder
- 1 tablespoon oil, for frying
For the Gravy
- 1 tablespoon butter
- 2 & 1/2 cups sliced mushrooms
- 3/4 cup onion, chopped
- 1 teaspoon minced garlic
- 2 & 1/2 cups beef broth
- 2 & 1/2 tablespoons flour
- 1 teaspoon whole grain mustard
- 1 tablespoon Worcestershire sauce
- Parsley, to garnish

- Creamy mashed potatoes
Instructions
- Prepare the Ingredients: Chop all onions and mushrooms as directed. Set aside 1/4 cup finely chopped onion and 1 cup finely chopped mushrooms for the steak mixture, and chop the rest of the onion for the gravy.
- Make the Steaks: In a large bowl, combine the ground beef with 1/4 cup finely chopped onion, 1 cup finely chopped mushrooms, egg, panko breadcrumbs, tomato paste, mustard, minced garlic, Worcestershire sauce, liquid smoke if using, kosher salt, black pepper, and onion powder. Mix well until all ingredients are thoroughly incorporated.
- Shape the Patties: Divide the mixture into 6 equal portions and shape each into an oval patty for that classic Salisbury steak shape.
- Cook the Steaks: Heat oil in a large skillet over medium-high heat. Add the patties and sear for about 2 minutes per side until nicely browned. Remove the patties from the skillet and set aside.
- Prepare the Gravy: In the same skillet, melt the butter and sauté the sliced mushrooms and the chopped onions reserved for the gravy over medium heat for about 5 minutes, allowing them to soften and release flavor. Add the minced garlic and sauté for another minute until fragrant.
- Make the Gravy Base: In a small bowl, whisk together the beef broth and flour until smooth. Slowly pour this mixture into the skillet while whisking continuously to prevent lumps. Stir in the whole grain mustard and Worcestershire sauce, then cook the gravy, stirring frequently for 2 minutes until it begins to simmer and thicken.
- Finish Cooking the Steaks: Return the browned patties to the skillet with the gravy. Reduce heat to medium-low and simmer uncovered for about 5 minutes, or until the patties are cooked through and the gravy has thickened to a luscious consistency.
- Serve: Sprinkle chopped parsley over the steaks and serve immediately alongside creamy mashed potatoes for a complete comforting meal.
